This process gives the oil a distinctly more intense and fruity flavor, as there is less oil in the olives at this point, resulting in a more concentrated flavor. At the same time, it tastes fresher, more well-balanced, and with minimal bitterness – making it ideal for those seeking a harmonious and elegant olive oil.
